Indonesian Fried Tofu, or Tahu Goreng, is a staple dish found everywhere from roadside warungs (small restaurants) to elaborate feasts. It's incredibly versatile, often served with spicy sambal (chili paste), soy sauce, and fresh vegetables. This vegan recipe aims to recreate that authentic flavor and crispy texture, bringing a little piece of Indonesia to your kitchen.

The key to great Tahu Goreng lies in the marinade and the double-frying technique. Don't be shy with the spices – the tofu needs a good coating to really absorb that delicious Indonesian flavor profile.

Ingredients:

  • 500g Firm or Extra-Firm Tofu (pressed to remove excess water – VERY important!)
  • 2 cloves Garlic, minced
  • 1 inch Ginger, minced
  • 1 tsp Turmeric Powder
  • 1/2 tsp Coriander Powder
  • 1/4 tsp Cumin Powder
  • Pinch of Cayenne Pepper (adjust to your spice preference)
  • 1 tbsp Soy Sauce (use Tamari for gluten-free)
  • 1 tbsp Lime Juice
  • 1 tbsp Vegetable Oil (for marinating)
  • Vegetable Oil (for frying – enough to deep-fry)
  • Salt to taste

For Serving (Optional):

  • Sambal (Indonesian Chili Paste – recipe below or store-bought)
  • Soy Sauce
  • Fresh Cucumber slices
  • Cabbage, shredded
  • Bean Sprouts
  • Lime wedges
  • Fried Shallots (optional)

Instructions:

  1. Press the Tofu: This is crucial for achieving a crispy exterior. Wrap the tofu in several layers of paper towels and place something heavy on top for at least 30 minutes, ideally an hour. The more water you remove, the crispier the final result.
  2. Prepare the Marinade: In a bowl, combine the minced garlic, ginger, turmeric powder, coriander powder, cumin powder, cayenne pepper, soy sauce, and lime juice.
  3. Marinate the Tofu: Cut the pressed tofu into approximately 1cm cubes or triangles. Gently toss the tofu with the marinade, ensuring each piece is well coated. Allow the tofu to marinate for at least 30 minutes, or even longer in the refrigerator for a deeper flavor.
  4. First Fry: Heat enough vegetable oil in a deep frying pan or pot over medium-high heat. Carefully add the marinated tofu in batches, being careful not to overcrowd the pan. Fry for approximately 3-5 minutes, until lightly golden. Remove the tofu with a slotted spoon and place on paper towels to drain excess oil.
  5. Second Fry (for Crispiness!): Increase the heat of the oil slightly. Fry the tofu again for another 2-3 minutes, until golden brown and crispy. This double-frying process is what gives Tahu Goreng its signature texture.
  6. Serve: Drain the tofu on paper towels and serve immediately with your favorite accompaniments. Sambal is a must for that authentic Indonesian kick! A squeeze of lime juice adds a refreshing touch.

Easy Sambal Recipe (Optional):

  • 5-10 Red Chilies (depending on spice preference)
  • 2 cloves Garlic
  • 1 inch Ginger
  • 1 tsp Lime Juice
  • Pinch of Salt
  • 1 tbsp Vegetable Oil

Blend all ingredients together in a food processor or mortar and pestle until a coarse paste forms. Add a little water if needed to reach the desired consistency.
